Beetroot boondi laddu | Beet ladoo-How to make-Step by step photos(Without artificial color)

Ingredients
- Gram flour [Kadalai maavu, besan] – 1 cup
- Sugar – 1 cup
- Water – ½ cup
- Ghee – 4 tbsp
- Cloves – 2
- Green cardamom – 3 or cardamom powder – ½ tbsp
- Almonds - 3
- Pistachios - 5
- Cashews – 5
- Raisins – 8
- Salt a pinch
- Beetroot juice & Water as needed
- Oil or ghee for deep frying
Preparation
- Heat ghee in a pan roast cashew nuts, Almonds, Pistachios & raisins then chop & keep it aside.
- Sieve gram flour.
- Now take the gram flour in a bowl, add pinch of salt then add beetroot juice to make it flowing consistency (Not too much watery)
- Once the oil heat up then pour one ladle full of batter over the boondi ladle then gently scratch with the ladle.
- Deep fry both on medium heat.
- Once its ready take it out & drain on absorbent paper.
- Transfer boondis to a bowl & cover with lid.
- Then fry another set of boondis then transfer to a bowl.
- Heat water & sugar (1: ½) in a pan let it boil till half string consistency [arai kambi padham] then cut off heat.
- Add two tbsp of ghee.
- Add fried boondi, raisins, cashew nuts, almonds, pistachios,& cloves to the warm sugar syrup & gently mix.
- Leave it for a min then again gently mix (So that the boondhi absorb the sugar syrup completely)
- Then take one handful of mixture and make a ball shaped Laddoos
- Then let it cool & store it in an airtight container use within 5 days
How To Make Beetroot Boondi laddu or Boondi ladoo - Step by Step Photos
Grate beetroot
Add grated beetroot in a mixer jar
dd water then finely grind
Drain beetroot juice
Squeeze extract beetroot juice
Add beet juice mix well
Beetroot boondi batter[Flowing batter] is ready
For sugar syrup add 1 cup sugar
Add water cardamom pods or cardamom powder, cook till on string consistency
Sugar syrup is ready cut off heat
Ghee roast nuts & raisins then chop
Heat oil hold bbondi ladle over the pan, pour beet gram flour batter shake & deep fry
Deep fry beet boondis on medium flame
Add fried boondis into sugar syrup mix well, cover it, leave it for 2 min
Add nuts & clove
Add raisins
Mix well
Beetroot boondis absorbed all the sugar syrup
Make equal size tight lemon size laddus
Beet laddu is ready, let it cool stor in an air tight container
