Hyderabadi Double ka meetha sweet is bread milk pudding recipe. It contains 3 important steps:-1. Ghee fry bread slices 2.Make rabri[Reduced milk] 3. Make sugar syrup. Combine all these process you will get rich sweet. You can serve it hot, cold or even you can bake it. Finally you can add condensed milk & nuts.
Main Ingredients
- Brown Bread – 6 slices
- Ghee –1/4 cup
- Almon & Pistachio –1 tbsp
Ingredients for 'rabri'
- Milk - 1 ltr
- Saffron powder– ½ tsp
- Sugar – 1/4 cup
- Almonds, pistachios – 3 tbsp
- Cardamom power – 1 tsp
Ingredients for 'Sugar syrup'
- Sugar – 1 cup
- Water – 3/4 cup
- Saffron powder– ½ tsp
- Cardamom power – 1 tbsp
Preparation
- Cut & remove the edges of brown bread then cut into squares.
- Heat ghee in a pan roast almonds, pistachios & chop or grate & keep it aside.
- Heat pan with water & sugar & let it boil & wait till sugar syrup becomes bit sticky consistency. Then cut off heat.
- Heat ghee in a pan then roast bread slices till golden brown.
- Heat milk in a pan & let it boil till it reduced to 1/3.
- Then add sugar, saffron & wait till milk reduces to half & slightly thick. This is called rabri[rabadi]. Then add chopped nuts & cardamom powder & let it cool.
- Place all fried bread cubes in a bowl. Then pour sugar syrup.
- Add pour reduced milk [rabri].
- Garnish with nuts & serve hot or chilled, or you bake it before serving.
Tips & Notes
- For another variation of Double ka meetha use condensed milk, jaggery or chocolate syrup
- You can add badam powder or rice flour for instant rabdi.
- You can use white bread.
- For healthy version add jaggery syrup or honey
- If you dont like ghee shallow fry in oil
- You can replace milk with almond milk, rice milk or coconut milk.
How to make Double ka meetha -Stepwise pictures[Simple, Easy & Delicious]
Take brown bread slices
Cut and remove edges
Cut into cubes
Bread cubes are ready
Heat ghee roast pista and almonds
Now its ready, cut off heat then chop
Heat ghee, add bread cubes shallow fry or roast
For sugar syrup:- Add sugar and water
Add cardamom powder, let it boil for 5 to 8 min
Now its ready, Add saffron powder, cut off heat
For Rabdi:- Heat pan with 1 ltr milk & let it boil till 1/3
Add sugar
Add cardamom powder
Add saffron powder & nuts
Rabdi ready, cut off heat
Arrange ghee roasted bread cubes in a bowl, pour sugar syrup
Leave it for 1 min
Add Reduced milk[Rabri]
Sprinkle roasted & chopped nuts
Serve hot or cold
