Assam Lemon pickle -How to make-Step by step photos & Video

Ingredients
- Assam Lemon – 4
- Gingelly oil – 50 ml
- Mustard seeds – 1 tbsp
- Fenugreek seeds– 1 tbsp
- Red chilli powder– 1 or 2 tbsp
- Turmeric powder – 1 tbsp
- Asafetida – 1 tsp
- Sugar - 1 tbsp
- Sea salt as required
Marinade
- Wash & wipe out assam lemon then cut into cubes.
- Sprinkle sea salt, mix well and expose to sunlight for 2 days.
Seasoning & Preparation Method
- Dry roast mustard seeds, Fenugreek, and grind to fine powder.
- Heat 50 ml gingelly oil then keep it aside.
- Heat 1 ladle sesame oil in a pan then add mustard seeds let it splutter.
- Add asafoetida, red chilli powder, turmeric powder , sugar & freshly ground mustard and fenugreek mix well.
- Add lemon & salt mix well mix well.
- Add sesame oil mix well.
- Once its ready, let it cool & Store it in porcelain jar (Optionally pour some more gingelly oil), serve with pickle, upma or chapathi.

Assam Lemon
Slice Lemon
Cut lemon into cubes, sprinkle sea salt, dryout in the sunlight for 2 days
Two days later
Heat pan, add fenugreek, dry roast
Now its ready, transfer to a plate, let it cool
Add mustard seeds, dry roast
Now its ready, remove it from pan
Add dry roasted fenugreek, mustard, coarsely grind
Coarsely ground fenugreek mustard powder ready
Heat 1 ladle sesame oil in a pan
Add 1 tbsp mustard seeds
Add 1 tsp asafoetida
Add red chilli powder
Add 1 tsp turmeric powder
Add ground fenugreek powder
Add sugar
Add half dried lemon
Mix well, add salt
Add sesame oil, mix well
Now its ready, cut off heat
