Pickle and Raita Recipes

Pickle is tasty instant side dish for all rice varieties, chapathi, roti, bread, sandwich, idli or dosa. You can preserve everything using our simple method. Traditionally pickle preparation in south india contains 4 to 5 simple steps, chop [any veg or lime, citron etc], seasoning with salt then dry out in sunlight for 3 days, then tempering with masala powders then preserve with gingelly oil in porcelain jar. You can keep it for 1 month. Compared to pickle raita is so simple and quick. Any grated or chopped vegetable with curd mixture is called raitha or pachadi. Only in 3 min you can easily make this side dish for biryani, pulao & chapatti etc.
