Pani Puri

Ingredients

  • Puris - 10 to 15
  • Potato boiled and smashed - 1 big
  • Green peas or white peas [soaked and boiled with turmeric powder and salt] - ½ cup
  • Coriander leaves - ½ cup
  • Mint leaves - ¼ cup
  • Lemon juice - 4 to 5 tbsp
  • Pani puri masala* - 3 to 4 tbsp
  • Green chilli - 1 or 2
  • Salt to taste
  • Date tamarind chutney - 1 cup

Ingredients for making pani puri

  • Maida- ¼ cup
  • Wheat flour -1 cup
  • Salt to taste
  • Water

Method for making pani puri

  • Make soft dough by mixing all flour together with water. Cover it using cotton cloth and leave it for 25 mins

*Pani Puri Masala

Ingredients

  • Cumin powder [Cumin seeds roasted and powdered] - 2 tbsp
  • Coriander powder [Coriander seeds roasted and powdered] - 2 tbsp
  • Black pepper powder [freshly ground] - 1 tbsp
  • Dry mango powder - 3 tbsp
  • Asafetida - 1 pinch
  • Red chilli powder - 1 tbsp
  • Lemon - 2 tbsp
  • Salt

Method

  • Mix well all these ground spices to get fresh pani puri masala.
  • You can add black salt for nice flavour

Green water

Ingredients

  • Coriander leaves - ½ cup
  • Pudina (mint leaves) - ¼ cup
  • Green chilli - 1 finely chopped
  • Salt to taste
  • Lemon juice - 4 to 5 tbsp
  • Water

Method

  • Put coriander leaves, pudina, green chilli, salt in a mixer grind well. Add water and grind well
  • Transfer this green herbs water to a bowl. Add pani puri masala, 4 tbsp of lemon juice and mix well.
  • Keep it in refrigerator

Ganishing and serving pani puri

  • Make a ½ inch hole in each puri by gently breaking the top of the dome. Fill with boiled smashed potato 1 tbsp, boiled green peas 1 tbsp, green water 2 tbsp and chopped coriander leaves at the top.
  • Repeat this for all puris

Note

  • You can use date tamarind chutney for better taste.
