Fried Rice

Ingredients

  • Basmati rice - 2 cups
  • Onion - 1 sliced
  • Spring onion - ¼ cup
  • Carrot - 1 cut in to long strips
  • Capsicum - 1 cut in to long strips
  • Pepper powder [freshly ground] - 1 tbsp
  • Chopped coriander leaves - 2 springs
  • Tomato sauce - 1 tbsp
  • Dark Soya sauce - 1 tbsp
  • Curry leaves - 1 spring
  • Green chilli - 1 chopped
  • Garam masala -1 tbsp
  • Lemon juice - 1 tbsp
  • Salt to taste
  • Oil - 2 tbsp

Preparation

  • Put soaked (1 hr) basmati rice in boiling water and stir occasionally till it 75% cooked. Then close it by lid for 10 minutes (now it cooks 100%).
  • Heat pan with oil then add onion sauté till light brown then add curry leaves, green chilli sauté gently.
  • Add carrot stripes, green capsicum strips and sauté well for 3 min. Add spring onion and dark soya sauce, tomato & sauté and add cooked basmati rice and mix well.
  • Add salt, garam masala mix well.
  • Now fry on high flame for 2 minutes.
  • Add chopped coriander leaves, freshly ground peppercorns, lemon juice and spring onion serve hot.
