Red kidney beans sundal

Ingredients

  • Red kidney beans [Rajma] – 1 cup
  • Coconut – ¼ cup [grated]
  • Onion – 1 [sliced, For Navrathri-Dont add]
  • Curry leaves – 1 spring
  • Coriander leaves – 2 springs [chopped]
  • Green chilli – 1 [slit]
  • Mustard seed – 1 tbsp
  • Bengal gram – ½ tbsp
  • Urad dal- ½ tbsp
  • Turmeric powder – ¼ tsp
  • Red chilli powder – ¼ tsp
  • Oil – 1 tbsp
  • Salt to taste
  • Water as needed.

Preparation

  • Wash and soak red kidney beans overnight. Then drain water and boil in pressure cooker for 5 whistles.
  • Heat pan with oil add mustard seeds. Once it’s spluttered add Bengal gram, urad dal and onion sauté.
  • Add green chilli, curry leaves, salt, turmeric, & red chilli powder mix well.
  • Add boiled red kidney beans sauté well. Add salt if required.
  • Add grated coconut mix well & cut off heat.
  • Sprinkle coriander leaves & serve hot with rice.
