Chitranna recipe

Ingredients

  • Basmati rice – 2 cup [boiled]
  • Lemon juice – 3 tbsp
  • Roasted peanuts – ¼ cup
  • Sambar onion [shallots] – 5
  • Coconut – ¼ cup [grated]
  • Green chilli – ½ [slit]
  • Dry red chilli – 1
  • Ginger – 1 tbsp [finely chopped]
  • Curry leaves – 2 springs
  • Turmeric powder- ½ tsp
  • Mustard seeds – 1 tbsp
  • Bengal gram – 1 tbsp
  • Urad dal – 1 tbsp
  • Gingelly oil – 1 tbsp
  • Oil – 2 tbsp
  • Asafetida
  • Salt to taste

Method

  • Heat pan with oil add mustard seeds. Once it’s spluttered add Bengal gram, urad dal, and roasted peanuts. Then add onion sauté till soft.
  • Add coconut, ginger, dry red chilli, green chilli and curry leaves sauté. Then add asafetida & turmeric powder mix well.
  • Add boiled basmati rice and salt mix well. Then add lemon juice mix well.
  • Sprinkle 1 tbsp of gingelly oil mix well & cut off heat. Serve hot with coconut chutney or pickles, chips.
