Instant dum biryani using jeera rice-How to make-Step by step photos

Ingredients for rice
- Jeera rice –2 cups
- Green cardamom - 3
- Cinnamon stick- 1
- Cloves - 4
- Bay leaves - 1
- Saffron - 1 tsp
- Hot water - 4 tbsp
- Turmeric powder – ¼ tsp [optional]
- Salt to taste
- Ghee – 2 tbsp
- Water –4 cups
Ingredients for gravy
- Tomato -2 [chopped]
- Onion – 1 [sliced]
- Ginger – 1 tbsp [grated]
- Garlic – 1 tbsp [grated]
- Mint leaves -3 springs
- Curd - 1/4 cup or 4 tbsp
- Fennel seeds – 1 tbsp
- Green cardamom - 2
- Cinnamon stick- 1
- Bay leaves - 1
- Garam masala – ½ tbsp
- Red chilli powder – ½ tbsp
- Turmeric powder – ¼ tsp
- Salt to taste
- Butter – 1 ½ inch cube
- Oil – 2 tbsp
- Water as needed
Ingredients For final layer
- White jeera rice - 1 cup
- Yellow saffron rice - 1 cup
- Fried onion – 1/4 cup
- Mint leaves - 2 springs
- Melted butter & oil - 2 tbsp
- Masala Gravy - 1 cup
Preparation Method
- Wash & soak basmati rice for ½ an hour.
- In a bowl add turmeric and saffron, add hot water soak it for 10 min
- Heat pan add water let it boil then add cinnamon, cloves, bay leaf, cardamom, jeera rice, salt & ghee parboil.
- Then drain water, divide the rice into 2 equal portions.
- Add saffron water in portion mix well & keep it aside.
- In a mixer jar add ginger, garlic, green chilli, mint leaves finely grind.
- Heat pan with oil & butter or ghee. Add green cardamom, fennel seeds, cinnamon stick, cloves, bay leaves, sauté.
- Then add onion sauté till light brown.
- Then add ground paste mix well.
- Add tomato, turmeric, garam masala & red chilli powder mix well.
- Then add salt & water mix well & let it boil for 5 to 8 min.
- Once its ready, cut off heat.
Preparation Method Final Cut
- In a pot add gravy, white jeera rice, fried onion, mint leaves, yellow saffron rice, gravy, fried onion, mint leaves layer by layer.
- Finally add hot melted butter and oil, cover lid with cotton cloth
- Heat iron dosa tawa, place dum biryani pot, let it cook on low flame for 10 to 15 min
- Once itsready, remove lid & serve hot with raita
How to make Instant dum biryani at home- Stepwise pictures
Heat 4 cups of water, add cinnamon, cloves, cardamom, bay leaves & rice
Parboil
Jeera rice ready, cover lid, keep it aside
In a bowl add turmeric powder, saffron, add hot water, soak it for 10 min
Divide the rice into two equal parts
Add safrron turmeric water into 1 part
Mix well
In a mixer jar add, mint, garlic, green chilli and ginger
Coarsely grind
For fried onion:-Slice onion
Heat oil in a pan, add sliced onion
Deep fry on low flame till crisp
Fry for 2 min
Now its ready, remove it from oil
Drain on absorbent paper
Heat oil and ghee in broad pan, add cardamom, ciinamon, bay leaf, fennel, onion fry
Add ground mint mixture saute for 1 a min
Add tomato, red chilli powder, garam masala, turmeric powder
Boil for 5 min
Add curd, mix well, cook on medium flame for 2 min
Heat oil and ghee in broad pan
Take a pan, add gravy
Addd jeera rice, fried onion ,mint leaves
Add saffron rice, fried onion, mint leaves
Add gravy
Add fried onion, mint leaves
Add hot oil & melted butter
Heat iron dosa, place layered rice pan
Cover lid with cotton cloth, close it and cook for 10-15 on low flame
After 15 min, delicious jeera rice dum biryani ready
Serve hot with any raita or veg salna
