Samai rice biryani-How to make-Step by step photos & Video

Ingredients
- Samai rice[Little Millet]– 1 cup
- Tomato -2 [chopped]
- Coconut milk –1 cup
- Onion – 1 [sliced]
- Ginger & garlic– 1 1/2 tbsp [mashed]
- Fennel seeds – 1 tbsp
- Green cardamom - 2
- Cinnamon stick- 1
- Cloves - 2
- Bay leaves - 1
- Stone flower - 1
- Garam masala – 1 tsp
- Turmeric powder – ¼ tsp
- Salt to taste
- Oil – 2 tbsp
- Water –1/2 cup
For Paste
- Green chilli – 1 [slit]
- Mint leaves – 3 springs
- Coriander leaves – 2 springs
- Put these ingredients in a stone mortar pestle then grind to smooth paste with 1 tbsp of water.
Preparation Method
- Heat pressure cooker with oil & butter or ghee. Add green cardamom, fennel seeds, cinnamon stick, cloves, bay leaves, stone flower sauté.
- Then add onion sauté till light brown
- Then add ginger & garlic.
- Add freshly ground coriander, mint mixture saute.
- Add tomato sauté till soft.
- Add turmeric, garam masala mix well.
- Then add salt & coconut milk, water mix well & let it boil.
- Then add samai rice mix well, cover it & cook for 3 to 4 whistles.
- Sprinkle mint leaves & serve hot with salna kurma and raitha.

Samai rice biryani main ingredients
Wash samai rice [2 times]
Add coriander, mint , green chilli, salt & water, coarsely grind
Mint, coriander mixture is ready, keep aside
Heat pressure cooker, add spices
Add Onion saute till light brown
Add Ginger & garlic saute
Add Tomato saute
Add Turmeric powder
Add Freshly ground mint mixture
Add Garam masala
Add Samai rice, mix well
Add Salt
Add Coconut milk
Add Water
Add Pudina
Cover lid & cook for 3 to 4 whistles
After 4 whistles
Gently mix
Gently mix
Add Mint
Little millet biryani is ready
