Beetroot peanut rice-Easy healthy kids lunch box recipe

Ingredients
- Rice - 1 cup
- Beetroot – 1 [finely grated]
- Roasted peanuts[nilakadalai, verkadalai, groundnut] – ½ cup [peeled]
- Onion – 1 [sliced]
- Garlic – 1 [finely chopped or mashed]
- Green chilli – 1 [slit]
- Curry leaves – 1 spring
- Mustard seeds – 1 tbsp
- Bengal gram – 1 tbsp
- Urad dal – 1 tbsp
- Turmeric powder – ¼ tsp
- Red chilli powder – ½ tsp
- Salt to taste
- Oil – 3 tbsp
- Water as needed.
Preparation Method
- Boil rice then let it cool.
- Heat oil in a pan, add mustard seeds & let it splutter. Then add Bengal gram, urad dal, peanuts sauté.
- Add onion & garlic sauté till soft or light brown. Then add green chilli & curry leaves.
- Add grated beetroot, red chilli powder, turmeric powder & salt sauté.
- Add water & cook till soft [Apr. for 3 min]. Once moisture disappear cut off heat or in a low flame mix boiled and cooled rice mix well. Then cut off heat serve hot.
