Kuska biryani rice-How to make-Step by step photos & Video

Ingredients
- Basmati rice – 1 ½ cup
- Tomato -2 [chopped]
- Coconut milk – 3 cup
- Onion – 1 [sliced]
- Ginger – 1 tbsp [grated]
- Garlic – 1 tbsp [grated]
- Fennel seeds – 1 tbsp
- Green cardamom - 3
- Cinnamon stick- 1
- Cloves - 4
- Bay leaves - 1
- Star anise - 1
- Stone flower - 1
- Garam masala – ½ tbsp
- Red chilli powder – ½ tbsp
- Turmeric powder – ¼ tsp
- Salt to taste
- Butter – 1 ½ inch cube
- Oil – 2 tbsp
- Water –¼ cup
For Paste
- Green chilli – 1 [slit]
- Mint leaves – 3 springs
- Coriander leaves – 2 springs
- Put these ingredients in a stone mortar pestle then grind to smooth paste with 1 tbsp of water.
Preparation Method
- Wash & soak basmati rice for ½ an hour.
- Heat pressure cooker with oil & butter or ghee. Add green cardamom, fennel seeds, cinnamon stick, cloves, bay leaves, star anise, stone flower sauté. Then add onion sauté till light brown then add ginger & garlic.
- Add green chilli, ground paste, tomato sauté till soft.
- Add turmeric, garam masala & red chilli powder mix well. Then add salt & coconut milk, water mix well & let it boil.
- Then add basmati rice mix well, cover it & cook for 3 to 4 whistles.
- Sprinkle mint leaves & serve hot with salna kurma and raitha.

How to make Kuska biryani - Stepwise pictures
Heat oil and ghee in broad pan
Add cardamom, fennel, bay leaves, cinnamom stick, star anise, cloves, stone flower
Add onion saute till soft or ligh brown
Add garlic and ginger saute
Add mint & coriander paste or chutney
Add tomato, turmeric and garam masala, red chilli powder mix well, cook till soft
Add coconut milk, salt and water mix well & let it boil
Add soaked rice mix well
Once its ready cover lid & cook for 10 to 15 min in medium flame
Finally add mint leaves mix well
Kuska is ready, serve hot with salna kurma or raitha
