Aloo dum biryani-How to make-Step by step photos & video

Ingredients for rice
- Basmathi rice –2 cups
- Green cardamom - 3
- Cinnamon stick- 1
- Cloves - 3
- Bay leaves - 1
- Salt to taste
- Ghee – 2 tbsp
- Water –4 cups
Ingredients for gravy
- Potato -3 [parboiled]
- Onion – 1 [sliced]
- Ginger – 1 tbsp [grated]
- Garlic – 1 tbsp [grated]
- Mint leaves -3 springs
- Curd - 1/4 cup or 4 tbsp
- Fennel seeds – 1 tbsp
- Green cardamom - 2
- Cinnamon stick- 1
- Bay leaves - 1
- Garam masala – ½ tbsp
- Red chilli powder – ½ tbsp
- Turmeric powder – ¼ tsp
- Salt to taste
- Butter – 1 ½ inch cube
- Oil – 2 tbsp
- Curd -3 tbsp
- Water as needed
Ingredients For final layer
- Basmathi rice -2 cup
- Saffron milk - 3 tbsp
- Fried onion – 1/4 cup
- Mint leaves & coriander leaves- 1/4 cup
- Fried cashews, raisins- 1/4 cup
- Edible food colour - 2 tbsp
- Sauted carrot - 1/4 cup [Saute striped carrot with cardamom, cinnamon powder]
Preparation Method
- Wash & soak basmati rice for ½ an hour.
- In a bowl add saffron, add hot milk or water soak it for 10 min
- Heat pan add water let it boil then add cinnamon, cloves, bay leaf, cardamom, basmathi rice, salt & ghee parboil.
- Then drain water, keep it aside
- In a bowl add boiled potato cubes, ginger garlic paste, red chilli, coriander, turmeric, garam masala, curd mix well, marinate for 10 min
- IHeat pan with oil & butter or ghee. Add green cardamom, fennel seeds, cinnamon stick, cloves, bay leaves, sauté.
- Add marianted potato, saute & cook for 5 min
- Then take 1 cup for later use
- Add boiled basmathi rice, fried onion, saffron milk, mint coriander leaves
- Add food colour, potato masala, sauted carrot, arrange layer by layer
- Then cover with aluminum foil, Heat iron dosa tawa, place dum biryani pot, let it cook on low flame for 25 min on low flame
- Once its ready, cut off heat, serve hot with raita

Aloo dum biryani
Add 2 cups of basmathi rice
Wash and soak it for 30 min
In a bow ladd saffron and milk, soak it for 10 min
In a bowl add boiled potato cubes, turmeric, red chilli, coriander powder
Add ginger garlic, salt
Add garam masala
Add curd
Add lemon juice, marinate for 10 min
Boil water, add bayleaf, cloves, cinnamon, cardamom, salt
Add soaked rice
Boil for 70 percent
Now its ready
Strain water, keep it aside
Heat 1 tbsp oil , 2 tbsp ghee, bay leaf, cardamom, cinnamon, fennel, cloves
Add onion , green chilli
Add mint, coriander leaves
Add ginger, garlic
Add marinated potato saute for 3 min
Add salt, mix well
Cover lid, cook for 5 min
Saute for 1 min
Add boiled rice, mint coriander leaves
Add sauted carrot, cashews, raisins
Add fried onions
Add potato masala
Add edible food color
Add mint, coriander, fried nuts, mint corainder layer by layer
Cover with aluminum foil
Place it on iron tawa, cook for 25 min on low flame
25 min later, cut off heat
Perfect aloo dum biryani ready
Non-sticky tasty biryani ready
Serve hot
Perfect rich long grain dum biryani
Serve hot with salna
