Wheat flour nankhatai is simple and healthy, homemade crunchy biscuits. No oven required. We can make it in pressure cooker. No maida added, No egg added. This is perfect cookie with only wheat flour, gram flour, corn flour. Baking powder gives perfect texture. But one main important thing and trick for perfect biscuit is'Dont knead the dough too much'. Once gluten developed this biscuit will become hard. My mother and mother in law always making this with little bit rava. They are always making it with simple ingredients Like oil, vanaspathi, ghee, homemade butter and jaggery. They dont like maida. Instead of maida and corn flour my mother's original recipe contains rice flour, ragi, pearl millet, thinai, varagu, & samai flour.
Ingredients
- Wheat flour - 1 cup
- Gram flour [besan] - 1/4 cup
- Rava [semolina]–1 tbsp
- Ghee or butter– 1/2 cup
- Green cardamom powder– 1 tbsp
- Sugar – 1/2 cup [Powdered]
- Baking powder - 1/2 tsp
- Milk - 1/4 cup to 1/3 cup [Or as required to make dough]
- Pistachios- 1 tbsp for garnishing
Preparation
- Take 5 littre pressure cooker, **Remove gasket & whistle from the pressure cooker lid
- Then place grid then preheat for 10 min on low flame.
- In a bowl add wheat flour, gram flour, rava, baking powder, ghee, cardamom powder & powdered sugar mix well.
- Add Milk, knead it make dough.
- Then make balls out of the dough & flatten the balls.
- Flatten, make cavity then add pista
- Place it on the tray.
- Then Place the tray on pressure cooker grind.
- Close lid & cook for 30 min on medium flame.
- Once its ready carefully remove baking tray then un-mould & let it cool for 5 min.
- Put it on airtight container use within 1 week.
Tips & variations
- For chocolate nankhatai add cocoa powder.
- For rose nankhatai add rose syrup
- For green nankhatai add spinach.
- For kesar nankhatai add saffron
- You can replace sugar with jaggery syrup.
- Add milk instead of water
- Add roasted coconut, raisins, cashews, roasted peanuts & sesame seeds.
- You can use khus khus[poppy seeds]
- You can add maida & wheat flour[50:50] or gram flour & wheat flour, wheat flour & almond flour etc..
- You can add curd / butter.
- You can make any shapes like half moon shape, flower shape, diamond shape etc.
- You can add vanilla essence or nutmeg powder.
- You can add dalda instead of ghee.

Perfect Atta nankhattai
Take aluminium pressure cooker, place grid
Close, pre-heat for 10 to 15 min on low flame
Grease plate with oil
Sprinkle flour
Evenly coat, remove extra flour
In a bowl add wheat flour
Add gram flour
Add rava
Add powdered sugar
Add baking powder
Mix well
Add cardamom powder
Add ghee
Mix well
Add milk, make semi-soft dough
Dough is ready
You can refrigerate or immediately make cookies
Divide the dough into equal size balls
Flatten
Make cavity
Add pistachio
Place it in a plate
Place it in a pre-heated pressure cooker
close lid, cook for 30 min on medium flame
After 30 min, remove it from pressure cooker, let it cool
