Thekua-Bihari sweet recipe-How to make-Step by step photos

Ingredients
- Wheat flour - 1 cup
- Rava [semolina]– 1/4 cup
- Ghee or butter– 1/4 cup
- Green cardamom powder– 1 tbsp
- Sugar – 1/2 cup [Powdered]
- Water as needed
- Oil & ghee for deep frying
Preparation
- In a bowl add wheat flour, ghee, cardamom powder & powdered sugar mix well.
- Add water knead it make dough. Then cover it & leave it for 15 to 20 min.
- Sprinkle flour & roll out into thick chapatti.
- Cut into leaf shape, using knife make lines & leave it for 5 min.
- Heat oil & ghee in a pan then deep fry till crisp & golden brown on low to medium hot oil
- When it is ready take it out & drain on an absorbent paper.
- Then sprinkle 1 tbsp of powdered sugar cardamom over the biscuits mix well & let it cool.
- Store it in an airtight container and use within 5 days.
Tips & variations
- You can replace sugar with jaggery syrup.
- Add milk instead of water
- Add roasted coconut, raisins, cashews, roasted peanuts & sesame seeds.
- You can use khus khus[poppy seeds]
- You can add maida & wheat flour[50:50] or gram flour & wheat flour, wheat flour & almond flour etc..
- You can add curd / butter.
- You can make any shapes like half moon shape, flower shape, diamond shape etc.
- You can add vanilla essence or nutmeg powder.
- For crispy unique flavour, make sugar syrup[1 string consistency], add rose water, dip each thekua in sugar syrup, let it cool & serve.
- You can add dalda instead of ghee.
How to make Bihari thekua sweet-Step by step photos
In a bowl add wheat flour, rava
Add powdered sugar
Add cardamom powder
Add ghee
Add water / milk mix well, and make semi soft dough
Dough ready, cover it & leave it for 20 min
Roll out into thick chapathi
Now its ready
Cut into leaf shape
Draw leaf lines
Heat oil in a pan, drop raw thekua
Deep fry till crisp on low to medium flame
Flip over fry
Fry for 8 min
Crispy thekua sweet ready, remove it from oil
Thekua sweet, let it cool, store in an airtight container, use within 2 weeks
