Ragi jaggery cookies-No oven, No maida, No egg-How to make in pressure cooker -Step by step photos

This is perfect, textured and healthy eggless ragi cookie. No oven, no white sugar, no milk, no maida, & homemade. You can easily make it in pressure cooker.
Ragi jaggery cookies
Ingredients
- Ragi flour - 1 cup
- Ghee or butter– 1/2 cup
- Green cardamom powder– 1 tbsp
- Jaggery – 1/2 to 3/4 cup [Powdered]
- Water/milk as needed
Preparation
- Take 5 or 3 littre pressure cooker, **Remove gasket & whistle from the pressure cooker lid
- Then place grid then preheat for 10 min.
- In a bowl add ragi flour, butter, jaggery, & cardamom powde mix well.
- Add water / milk [Apr.2 tbsp] knead it make dough.
- Then cover it & refrigerate for 15 to 20 min.
- Then make balls out of the dough & flatten the balls.
- Place it on the pressure cooker container
- Then Place the pressure cooker container on pressure cooker grind.
- Close lid & bake it for 15 to 20 min on low to medium flame.
- Once its ready carefully remove baking tray then un-mould & let it cool.
- Put it on airtight container use within 1 week.
Tips & variations
- For chocolate ragi biscuits add cocoa powder.
- You can replace butter with honey
- You can add grated roasted coconut and coconut milk for different flavour
- You can add milk instead of water
- You can add raisins, cashews, roasted peanuts, chocolate chips & sesame seeds.
- You can make crinkle ragi cookies
- You can use khus khus[poppy seeds]
- You can add maida & wheat flour[50:50] or gram flour & wheat flour, wheat flour & almond flour etc..
- You can add curd, baking powder or baking soda..
- You can make any shapes like half moon shape, flower shape, diamond shape etc.
- You can add vanilla essence or nutmeg powder.
- You can make thumbprint cookies

Add ragi flour in a bowl
Add jaggery
Add butter
Add cardamom powder
Mix well
Add water, make soft dough [Apr, 3 tbsp]
Dough is ready, you can refrigerate for 10 min or instantly make balls
Preheat pressure cookies
Divide the dough into equal size portions
Make balls
Falttern
Place half almond
Place it in a container
Place it in pressure cooker
Close lid, bake it for 15 to 20 min
After 20 min
Perfect textured ragi cookies ready
Let it cool, store in an airtight container, use within 1 week
