Homemade digestive biscuits are healthy, no maida, no white sugar biscuits. Only jaggery wheat flour, ragi flour, oats required to make these cookies.
Ingredients
- Wheat flour - 3/4 cup
- Ragi flour- 1/3 cup
- Milk powder- 1/4 cup
- Cardamom powder - 1/2 tsp
- Oats - 1/4 cup
- Jaggery - 1/2 cup
- Butter - 1/2 cup
- Oil - 1/4 cup
- Salt to taste
- Baking powder - 1/4 tsp
- Baking soda - 1/4 tsp
Preparation
- Roast oats for 2 min, then put in a mixie jar, coarsely grind
- Heat pan, add jaggery & water let it dissolve
- In a bowl add butter, oil, beat till fluffy
- Add jaggery syrup, mix well.
- Add wheat flour, milk powder, ragi flour, ground oats, cardamom powder mix well
- Add baking powder, baking soda, pinch of salt, make dough. Then rest for 15 min
- Then place dough over greased butter sheet, rollout into thick sheet
- Then cut into circles
- Pre-heat OTG/Oven for 10 min 250 C
- Place it in a baking tray, bake for 18 min, 180 Degree C
- Once its ready, let it cool for 30 min
- Then store in an airtight container, use within 1 month
Tips & variations
- If you knead the dough for long time cookis will become hard
- For chocolate flavour add cocoa powder
- You can make any shape
- OTG baking is best compare to Oven
- Please avoid non-stick pan for baking.

Perfect Digestive biscuits
Add 1/4 cup oats
Roast for 1 min
Let it cool then grind
Heat pan, add jaggery & water
Dissolve
boil for 1 min
in a bowl add butter & oil, beat till fluffy
Add jaggery syrup
Mix well
Add wheat flour
Add ragi flour
Add milk powder
Add cardamom powder
Add baking Powder
Add baking soda
Mix well, make soft
Dough ready
Cover lid, rest for 15 min
Place baking sheet, grease with 1 tbsp
Place dough, roll out into thick sheet
Cut into circles
Biscuits ready
Arrange over the buttersheet
Place it in a pre-heated OTG or oven
Bake for 15 to 18 min, 180 C
Biscuits ready, let it cool for 30 min
Perfect crunchy digestive biscuits ready
For kadai baking [Pre-heat iron kadai for 10 min -low flame], Place tray
Cover lid, cook for 25 min low-medium flame
Perfect digestive biscuits ready
Store in an airtight container, use within 1 month
