Carrot cabbage thoran-How to make-Step by step photos

Ingredients
- Carrot – 1 cup [finely chopped]
- Cabbage – 1 cup [cut into long thin strips or grate]
- Coconut – ½ cup [grated]
- Dry red chilli -1
- Green chilli - 1
- Onion – 1 [chopped]
- Curry leaves – 1 spring
- Turmeric powder – ¼ tsp
- Urad dal – 1 tbsp
- Mustard seeds – 1 tbsp
- Asafetida a pinch
- Salt to taste
- Coconut oil – 1 ½ tbsp
- Water as needed
Preparation
- Heat coconut oil in a pan, add mustard seeds & let it splutter. Then add urad dal sauté gently.
- Add green chilli, dry red chilli, curry leaves & asafetida sauté.
- Add onion sauté till soft. Then add carrot sauté for a min.
- Then add cabbage sauté for 1 min.
- Add salt, turmeric powder mix well & sauté for 1 min. Then add water, cover it & cook till soft.
- Finally add grated coconut mix well & cut off heat, serve hot with rice.
Tip
- Use coconut oil for better flavor.
How to make Carrot cabbage thoran- Stepwise pictures
Heat coconut oil in a pan, add mustard & urad dal
Add curry leaves, green chilli, dry red chilli saute
Add onion, salt, asafetida, saute till soft
Add carrot saute for a min.
Add cabbage strips saute
Add turmeric powder, salt mix well
Add water, cover lid, cook till soft
Finally add grated coconut mix well & cut off heat
Kerala carrot cabbage thoran is ready, serve hot with rice
