Ingredients
- Black rice[Kavuni arisi] –1 cup
- Idli Rice – 1 cup
- Urad dal – 1/2 cup
- Fenugreek – 1 tbsp
- Salt to taste
- Water as needed
Preparation
- Wash and Soak black rice, idli rice, urad dal & fenugreek separately for 6 hours.
- Drain water then grind to smooth batter.
- Add salt and leave the batter for fermentation [approximately. 8 hours].
- Check the consistency, Add water if required.
- Heat iron dosa pan, pour batter, pour 1 tbsp of oil, cover lid & cook,
- Once uthappam is ready, transfer to a plate & serve hot with chutney and sambar
How to make Black rice uthappam- Step by step photos
Take 1 cup black rice
Add idli rice
Idli rice & black rice
Add fenugreek seeds
Add urad dal
Wash 2 to 3 times
Add water soak it for 5 to 6 hours
After 6 hours, drain water
Now its ready to grind
Put soaked ingredients, grind to smooth batter
Idli ingredients ratio [4 cups + 1 cup + 1 tbsp For soft Idly]
Add salt
Cover lid & leave it for fermentation[Apr 8 hours]
Fermented batter ready
Add water to adjust the consistency
Heat iron dosa tawa, pour batter
Gently spread
Add 1 tbsp oil around the uthappam
Cover lid, Cook for 2 min
One side uthappam ready
Flip over cook for 2 min
Nowits ready, remove it from pan
Pour batter, make tiny uthappm
Flip over, cook both sides
Or you can skip this step
