Ingredients
- Aval [Poha, Flattened rice] –3 tbsp
- Carrot- ¼ cup [finely grated]
- Ghee [melted butter] – 3 tbsp
- Milk-1 ½ cup
- Brown sugar [or white sugar or jaggery] – ¼ cup
- Green cardamom – 2 or Cardamom powder – ½ tbsp
- Almond-7
- Pistachios - 5
- Saffron – few
Preparation
- Heat pan with ghee then roast almonds & pistachios, grate then keep it aside.
- Add green cardamom & brown sugar in a mixer jar grind to fine powder
- In the same pan add poha sauté for 2 min then add carrot sauté for another 2 min.
- Add milk, let it boil & thickens.
- Add green cardamom & sugar mixture, stir well.
- Once payasam reached creamy like consistency then cut off heat
- Add ghee roasted pistachios and almonds slices, serve hot or chilled.
Tip
- For another variation of rava payasam use condensed milk or sugar
- For healthy payasam add honey, dates syrup or jaggery

Heat ghee in a pan, add almonds, pistachios roast, cashews, raisins[optional]
In the same pan add ghee, aval, carrot roast
Add milk let it boil
In a medium flame, stir slowly till milk reduces to half.
Add brown sugar cardamom in mixer jar finey grind
Add ground brown sugar & cardamom mixture
Perfectly cooked & milk reduced, cut off heat
Poha carrot kheer is ready, Add roasted chopped nuts, serve hot or chilled
