Varagu murukku / Kodo millet chakli [jantikalu]-How to make-Step by step photos

Ingredients
- Varagu maavu [Kodo millet flour] – ¼ cup
- Rice flour [Arisi maavu, chawal ka atta ] – ¼ cup
- Urad dal flour [Ulundu maavu] – 2 tbsp
- Roasted gram flour [Pottukadalai maavu]– 3 tbsp
- Kashmiri Red chilli powder – 2 tbsp
- Cumin seeds [jeera] – 1 tbsp
- White sesame seeds[Ellu] - 1 tbsp
- Asafetida a pinch
- Butter – 1 tbsp
- Oil for deep frying
- Salt to taste
- Hot or Warm Water as needed
Preparation Method
- In a bowl add varagu maavu, rice flour, urad dal flour, roasted gram flour, asafetida, sesame seeds, cumin seeds, salt & butter mix well
- Then add warm or hot water mix well, knead it & make soft dough [It should be soft & non sticky].
- Pour 1 tbsp oil over the dough, knead it again, cover it & keep it aside.
- Heat enough oil in a pan, take murukku mould plate then place it in a muruku kuzhal.
- Fill the prepared dough in a muruku kuzhal [one handful] & just press out or squeeze over the ladle & deep fry till crisp on medium hot oil.
- Flip over & fry another side.
- Once it ready or the oil sound disappears then take it out & drain on absorbent paper.
- Leave it for room temperature [Apr. 2 min]. Then store in an airtight container.

In a bowl add varagu mmavu, rice flour, roasted gram flour, urad dal flour, asafetida, sesame seeds, cumin, red chilli powder, butter and salt mix well then add hot water make soft dough. Then pour 1 tbsp of oil knead again & keep aside
In a murukku kuzhal fit muruku mold plate
Put handful of varagu maavu in a muruku kuzhal & gently press
Heat oil in a pan squeeze over the oil & deep fry till crisp on medium flame.
Flip over deep fry other side
Varagu murkku is ready take it out
Drain varagu murukku chakli on absorbent paper
