Beetroot thoran kerala style-How to make-Step by step photos

Ingredients
- Beetroot – 1 cup [finely chopped]
- Coconut – ½ cup [grated]
- Dry red chilli -1
- Green chilli - 2
- Onion – 1 [chopped]
- Curry leaves – 1 spring
- Turmeric powder – ¼ tsp
- Bengal gram – ½ tbsp
- Urad dal – 1 tbsp
- Mustard seeds – 1 tbsp
- Asafetida a pinch
- Salt to taste
- Coconut oil – 1 ½ tbsp
- Water as needed
Preparation
- Heat coconut oil in a pan, add mustard seeds & let it splutter. Then add Bengal gram, urad dal sauté gently.
- Add green chilli, dry red chilli, curry leaves & asafetida sauté.
- Add onion sauté till soft. Then add beetroot sauté for 1 min.
- Then add salt, turmeric powder mix well & sauté for 1 min. Add water, cover it & cook till soft.
- Finally add grated coconut mix well & cut off heat, serve hot with rice.
How to make Beetroot thoran- Step by step photos
Heat coconut oil, fry mustard seeds, urad dal till light brown
Add curry leaves, green and dry red chilli.
Add onion, asafetida, & salt saute till soft
Add chopped beetroot, turmeric powder & salt saute well
Add water, cover lid & cook till soft.
Finally grated coconut mix well
Once its ready, cut off heat
Serve hot with rice
