Ragi idiyappam [Finger millet string hoppers]-Stepwise photos & Video

Ingredients
- Rice flour – 1 cup
- Ragi flour - 1/2 cup
- Oil – 2 tbsp
- Salt to taste
- Warm water as needed.
Preparation Method
- Boil 1 and 1/4 cup water
- In a bowl add rice flour, ragi flour, salt, oil mix well.
- Add boiled water, mix well, cover lid, leave it for 5 min
- Then knead it for 2 min
- Grease murukku kuzhal with oil
- Add handful dough, squeeze over idiyappam plates
- Cover & Steam it for 10 minutes.
- Then Serve hot with Kurma, salna, coconut milk or chutney.
Ingredients for salna
- Multi grains - 1 cup
- Oil - 2 tbsp
- Spices- Fennel, cloves, cinnamon, cardamom, stone flower, bay leaf
- Turmeric powder - 1/4 tsp
- Red chilli powder - 1 tsp
- Garam masala powder - 1 tsp
- mint coriander leaves - 1/4 cup
- Green chilli - 1
- Onion - 1
- Ginger garlic - 1 tbsp
- Tomato - 1 [finely chopped]
- For paste:- Cashews [1 tbsp], roasted gram[ 1 tbsp] coconut [2 tbsp], poppy seeds [1 tsp]
- Salt to taste
- Water as needed.
Preparation Method
- In a mixie jar add cashews, raosted gram, coconut, poppy seeds grind to fine paste
- Heat 2 tbsp oil, addd spice fry till you get nice aroma
- Add onion, ginger, garlic, green chilli saute till soft
- Add mint, coriander saute for 50 sec
- Add tomato, turmeric, red chilli powder, garam masala powder, coriander powder, mix well
- Add ground paste mix well
- Add water cook for 5 to 8 min
- Once its ready, serve hot with idiyappam

Instant ragi idiyappam & multi grain salna
How to make finger millet string hoppers without long time kneading?
BOil 1 and 1/4 cup water
Now its rady, cut off heat
Add rice flour
Add ragi flour
Add salt
Mix well
Add boiled water
Mix well
Add 1 tbsp oil
Mix well make soft dough
Dough ready
Cover lid, leave it for 5min
Knead it for 2 min
Grease murukku kuzhal with oil
Add ragi mixture
Squeeze
Grease idiyappam plates with oil
Squeeze over the plate
Soft squeezing
3 plates ready
Cover lid, steam it for 10 min
10 min later
Leave it for 5 min
Remove it from plates
For multi grain salna
For multi grain salna:- In a pressure cooker add soaked multi grain
Add salt, turmeric
Cover lid, cook for 4 whistle
Soft boiled multi grains ready, strain water
In a mixie jar, add cashews, roasted gram, coconut
Add poppy seeds
Add water, grind to fine paste
Heat pan add 2 tbsp oil, fennel, cloves, cinnamon, bayleaf, cardamom, star anise, stone flower
Add onion
Add garlic, ginger, green chilli
Add tomato
Add turmeric, red chilli pwoder
Add salt
Add garam masala
Add mint coriander leaves
Add pressure cooked multi grain
Add water, cook till soft
Ground mixture ready
Add ground cashew mixture
Mix well
Add water
Cook for 5 min
Now its ready
Serve hot with ragi idiyappam
