Instant carrot rice
Ingredients
- Rice -2 cups [boiled]
- Carrot - 2 [grated]
- Tamilnadu curry powder -1.5 tbsp
- Green chilli - 2 [optional]
- Curry leaves- 2 springs
- Urad dal - 1 tsp
- Bengal Gram-1 tbsp
- Turmeric powder - 1 tsp
- Asafetida - 1/4 tsp [optional]
- Oil - 2 tbsp
- Salt to taste
Preparation Method
- Heat oil in a pan, add mustard seed & let it splutter.
- Then add Bengal gram, urad dal, green chilli, asafetida, turmeric powder, and curry leaves one by one.
- Add grated carrot and salt saute for 3 min.
- Add boiled rice & curry powder mix well.
- Once its ready, cut off heat, serve hot with pickle or chips.

Heat 2 tbsp oil in a pan add Mustard, urad dal, bangal gram, & curry leaves, green chilli
Add asafoetida
Add grated coconut
Add turmeric powder
Add salt
Add boiled rice
Add curry powder [ Bengal gram, urad dal, dry red chilli, curry leaves, coconut, pepper, cumin,coriander,& mustard seeds]
Mix well
Carrot rice ready
Serve hot with any chips or raita
