How to make Carrot capsicum rice-Instant lunch box recipe video
Ingredients
- Rice -1.5 cups [boiled]
- Capsicum - 1 [chopped]
- Carrot - 1 [chopped]
- Green chilli - 2 [optional]
- Curry leaves- 2 springs
- Urad dal - 1 tsp
- Bengal Gram-1 tbsp
- Red chilli powder - 1 tsp
- Asafetida - 1/4 tsp [optional]
- Oil - 2 tbsp
- Salt to taste
For roasting & grinding Ingredients
- Bengal gram - 1 tbsp
- Urad dal- 1 tbsp
- Coriander seeds- 1/2 tbsp
- Cumin seeds- 1/2 tbsp
- Coconut- 2 tbsp
- Dry red chilli - 1
- Garlic - 3 cloves
- Oil - 1 tbsp
- Salt to taste
- Roast all above ingredients, put it in a mixie jar, coarsely grind without water
Preparation Method
- Heat oil in a pan, add mustard seed & let it splutter.
- Then add Bengal gram, urad dal, green chilli, asafetida, and curry leaves saute
- Add carrot ,capsicum salt saute for 3 min.
- Add red chilli powder & ground mixture mix well
- Add boiled rice & salt mix well.
- Once its ready, cut off heat, serve hot with pickle or chips.

Heat 1 tbsp oil, add bengal gram, urad dal, corainder, garlic, cumin, dry red chilli
Add coconut, saute
Now itsready, let it cool
Put it in a mixie jar
Coarsely grind
Heat pan, add mustard, bengal, urad dal, curry leaves, green chilli
Add asafoetida
Add carrot, capsicum
Add salt
Add turmeric, red chilli powder
Add ground mixture
Saute
Add rice, mix well
