Ingredients

  • Basmati rice[Chawal, Arisi] -1/4 cup
  • Moong dal-3 tbsp
  • Ghee [melted butter] – 2 tbsp
  • Milk- 1 ltr
  • Jaggery-3/4 cup
  • Cardamom powder – ½ tbsp
  • Raisins - 7
  • Cashew Nut, Almonds -2 tbsp
  • Coconut -2 tbsp [grated]
  • Water – 1 cup

Preparation

  • Dry roast basmati rice & moong dal till you get nice aroma.
  • Wash & soak basmati rice, moong dal for 30 min
  • Heat ghee in a pan then roast cashew nuts, & raisins, keep it aside.
  • Heat pan add coconut,dry roast for 2 min.
  • Heat pan add jaggery, & 1/4 cup water let it boil for 5 min.
  • Then strain impurities & keep it aside
  • Add milk and water in a pan, add soaked basmati rice and moong dal let it boil till soft
  • Add cardamom powder mix well then cut off heat & leave it for 5 min
  • Add jaggery syrup mix well.
  • Add ghee roasted cashew nut,raisins, coconut, & almonds. Serve hot or cold.

Tips & Notes

  • For another variation of rice payasam use condensed milk or palm jaggery
  • You can make it in one pot pressure cooker method also
  • For best result add jaggery when the misture is in warm.
  • When you add jaggery syrup in hot rice milk mixture it will spoil/milk curdled.
  • You can replace cow's milk with add almond milk, coconut milk.

Variations:-

  • Chocolate rice payasam:-Add cocoa powder, chocolate chips
  • Apple rice kheer- Add grated apple, cinnamon & sugar
  • Rose flavoured rice dal payasam:-Add rose syrup & rose petals
  • Matcha rice kheer/payasam:-Add matcha green tea powder, milk & sugar.
