Arisi paruppu payasam | Rice moong dal kheer-How to make-Step by step photos

Ingredients
- Basmati rice[Chawal, Arisi] -1/4 cup
- Moong dal-3 tbsp
- Ghee [melted butter] – 2 tbsp
- Milk- 1 ltr
- Jaggery-3/4 cup
- Cardamom powder – ½ tbsp
- Raisins - 7
- Cashew Nut, Almonds -2 tbsp
- Coconut -2 tbsp [grated]
- Water – 1 cup
Preparation
- Dry roast basmati rice & moong dal till you get nice aroma.
- Wash & soak basmati rice, moong dal for 30 min
- Heat ghee in a pan then roast cashew nuts, & raisins, keep it aside.
- Heat pan add coconut,dry roast for 2 min.
- Heat pan add jaggery, & 1/4 cup water let it boil for 5 min.
- Then strain impurities & keep it aside
- Add milk and water in a pan, add soaked basmati rice and moong dal let it boil till soft
- Add cardamom powder mix well then cut off heat & leave it for 5 min
- Add jaggery syrup mix well.
- Add ghee roasted cashew nut,raisins, coconut, & almonds. Serve hot or cold.
Tips & Notes
- For another variation of rice payasam use condensed milk or palm jaggery
- You can make it in one pot pressure cooker method also
- For best result add jaggery when the misture is in warm.
- When you add jaggery syrup in hot rice milk mixture it will spoil/milk curdled.
- You can replace cow's milk with add almond milk, coconut milk.

- Chocolate rice payasam:-Add cocoa powder, chocolate chips
- Apple rice kheer- Add grated apple, cinnamon & sugar
- Rose flavoured rice dal payasam:-Add rose syrup & rose petals
- Matcha rice kheer/payasam:-Add matcha green tea powder, milk & sugar.

Heat pan add moong dal and rice
Dry roast till you get nice aroma
Wash and soak it for 30 min
Ghee roast cashews & raisins, keep it aside
Dry roast coconut
Transfer roasted ingredients to a plate, keep it aside
Heat pan add jaggery powder
Add water
mix well
Let ti boil for 5 min then cut off heat
Heat milk and water, add moong dal and rice
Boil till soft
Almost ready, Let it boil for 5 min
Add cardamom powder
Now its ready
Cut off heat, let it cool for 5 min
After 5 min. now its warm
Add jaggery syrup without impurities
Mix well
Delicious and healthy payasam ready
Serve hot or cold
