Samai [samak, little millet] is one of the healthiest millet in ancient tamilnadu. Samai, jaggery & milk combination is delicious. No white sugar required. This payasam is aromatic & flavourful. Dont add jaggery when boling. If you add jaggery in boling milk mixture it will separates or curdle. So cut off heat the nadd jaggery/jaggery syrup. If you are vegan use coconut milk instead of milk. WE can use almond milk, oats milk or cashew milk.
How to make Samai jaggery payasam video
Ingredients
- Samak rice [Little Millet, samai arisi] – 3/4 cup
- Milk – 7 cups
- Water – 1 cup
- Jaggery –1 cup
- Cardamom powder – ½ tbsp
- Raisins - 7
- Cashew nut - 5
- Ghee -2 tbsp
Method
- Wash samak rice 2 to 3 times.
- Heat pan then add ghee & roast cashews & raisins. Keep it aside.
- Add samak rice, roast for 3 min
- Add boling milk & water, cook till soft
- Add cardamom powder mix well then cut off heat
- Then add jaggery powder, roasted cashewnuts, & raisins.
- Serve hot or cold.

Delicious little millet jaggery payasam
Take 3/4 cup samai rice
Add water wash 2 to 3 times
Drain water
Heat pan, ghee roast cashews, raisins
Roast samai rice for 3 min
After 3 min
Add milk
Cook till soft
Add cardamom powder
Now its ready, cut off heat
Add jaggery powder
Mix well
Add nuts & raisins
Samai rice paaysam ready
