Samai [samak, little millet] is one of the healthiest millet in ancient tamilnadu. Samai, jaggery & milk combination is delicious. No white sugar required. This payasam is aromatic & flavourful. Dont add jaggery when boling. If you add jaggery in boling milk mixture it will separates or curdle. So cut off heat the nadd jaggery/jaggery syrup. If you are vegan use coconut milk instead of milk. WE can use almond milk, oats milk or cashew milk.

How to make Samai jaggery payasam video


Ingredients

  • Samak rice [Little Millet, samai arisi] – 3/4 cup
  • Milk – 7 cups
  • Water – 1 cup
  • Jaggery –1 cup
  • Cardamom powder – ½ tbsp
  • Raisins - 7
  • Cashew nut - 5
  • Ghee -2 tbsp

Method

  • Wash samak rice 2 to 3 times.
  • Heat pan then add ghee & roast cashews & raisins. Keep it aside.
  • Add samak rice, roast for 3 min
  • Add boling milk & water, cook till soft
  • Add cardamom powder mix well then cut off heat
  • Then add jaggery powder, roasted cashewnuts, & raisins.
  • Serve hot or cold.
