Sugar Adhirasam

Ingredients
- Rice - 1 kg
- White sugar - 3/4 kg
- Green cardamom powder - 1 tsp
- Oil - ½ ltr [For deep frying]
Preparation
- Soak rice for 3 hours.
- Drain the water and spread over the cotton cloth to absorb extra moisture on the rice.
- Now it is ready to grind. Put into mixer grinder and grind to fine powder (you can use traditional method to beat the rice using Ural & Ulakkai) and keep it aside.
- Heat pan with little water and put sugar & mix well till completely melted.
- Now pour melted sugar slowly & gently onto the rice flour. Make sure that you are doing the process of pouring & mixing simultaneously. The dough mixture should not be sticky and not too hard.
- Make lemon size ball out of the dough.
- Grease plantain leaf / polythene paper with oil. Take the ball on the leaf and flatten gently and row it on the cotton cloth then deep fry till golden brown.
- Then squeeze the oil (if you don’t squeeze the Adhirasam soft always) then put the fried Adhirasam over the wide pan and sprinkle green cardamom powder.
- Preserve this in an air tight container.

Note
- Take little bit of sugar and put into water, if it is not broken it is right time to add the rice flour
Tip
- If the mixture is too sticky roll it over on the rice flour and if the mixture is too hard then mix hot milk with the mixture
