Masala vada | Paruppu masala vadai| Dal fritters-How to make-Step by step photos & Video

Ingredients
- Bengal gram [Channa dal, kadalai paruppu]– 1 cup
- Toor dal[thuvaram paruppu] – 1 cup
- Rice flour or rava or poha – 1 tbsp
- Onion – 1 [chopped]
- Dry red chilli – 2 to 3
- Garlic – 4 cloves [chopped]
- Ginger – 2 tbsp [chopped] or ½ inch piece
- Fennel seeds – 1 tbsp
- Cumin seeds – ½ tbsp
- Coriander leaves – 3 springs or 4 tbsp [finely chopped]
- Curry leaves – 1 spring
- Mint leaves – 2 springs
- Salt to taste
- Oil for deep frying [ground nut oil or sunflower oil]
Preparation Method
- Wash & soak bengal gram, toor dal for 2 to 3 hours. Then wash & drain water completely.
- Add garlic, ginger, dry red chiili, cumin seeds, fennel seeds, coriander leaves, curry leaves, mint leaves & onion in a mixer jar then coarsely grind
- Then add bengal gram, toor dal, salt in the same mixer jar & coarsely grind [ Don’t add water]
- Then transfer mixture to a bowl add rice flour mix well.
- Divide the mixture into equal size balls then flatten.
- Heat enough oil in a pan deep fry both sides till golden brown & crisp on medium hot oil.
- Then drain on absorbent paper & serve hot with tea or coffee.

Bengal gram-Kadalai paruppu
Toor dal-Thuvaram paruppu-Thuvar dal
Soak toor dal, bengal gram for 2 to 3 hours
Add fennel seeds, cumin seeds, garlic, dry red chilli, ginger, onion in a mixer jar
Add curry leaves, coriander leaves, & mint leaves coarsely grind
Add soaked toor dal, channa dal & salt coarsely grind without water
Masala vadai mixture is ready
Add rice flour-arisi mmavu
Take lemon size mixture then shape & flatten
Heat oil in a pan put prepared vada, deep fry till crisp and golden brown
Masala paruppu vadai is ready, take it out
Drain on absorbent paper
Paruppu masala vadai is ready, serve hot with tomato sauce green chilli chutney
