Bitter gourd potato fry | Pavakkai urulaikizhangu varuval

Ingredients
- Bitter gourd [Pavakkai]– 1 [peel off the skin lightly, finely chop]
- Potato [Urulai kizhangu]-1 [finely chop]
- Red chilli powder – 1 tbsp
- Turmeric powder – ¼ tsp
- Mustard seeds – 1 tbsp
- Garlic – 2 cloves [finely chopped or mashed]
- Curry leaves – 2 spring
- Coconut – 3 tbsp
- Jaggery – 1 ½ tbsp
- Salt to taste
- Oil – 2 tbsp
Method
- Heat oil in a broad heavy iron pan add mustard seeds, let its splutter then add curry leaves & garlic fry.
- Add chopped bitter gourd, turmeric powder, red chilli powder sauté for 3 min.
- Then add chopped potatoes sauté for 3 min then cover lid & leave it for 2 min
- Then add coconut, salt mix well, sauté till soft & golden brown.
- Then cut off heat, Serve hot with rice or chapatti.
