Ingredients

  • Black Rice [Kavuni arisi]– 1 cup
  • Gram flour– 1/4 cup
  • Red chilli powder - 1 tbsp
  • Ghee - 2 tbsp
  • Asafetida [Hing, perungayam] – ¼ tsp
  • White sesame seeds – 1 tbsp
  • Oil for deep frying
  • Salt to taste
  • Water as needed

Preparation Method

  • Wash and soak black rice for 2 hours then drain water.
  • Then spread black rice on the cotton cloth let it dry.
  • Put dried black rice in a mixie jar grind to fine powder or you can sieve with out lumps.
  • In a bowl add black rice powder, gram flour, asafoetida, sesame seeds, red chilli powder, salt and ghee mix well.
  • Add water mix well, knead it make soft dough.
  • Add 1 tbsp of oil knead it again [It should be soft & non sticky].
  • Heat enough oil in a pan, take star murukku mould plate then place it in a muruku kuzhal.
  • Fill the prepared dough in a muruku kuzhal [one handful] & just press out or squeeze over the ladle & deep fry till crisp on medium hot oil.
  • Flip over & fry another side.
  • Once it ready or the oil sound disappears then take it out & drain on absorbent paper.
  • Leave it for room temperature [Apr. 2 min]. Then store in an airtight container use with in 1 week.
