Bhindi raita | fried ladies finger in seasoned yogurt-How to make-Step by step photos

Ingredients
- Ladies finger[Bhindi, okra, vendakkai]– ¼ cup
- Curd / Yogurt – 1 cup [fresh]
- Red chilli powder – ¼ tsp
- Roasted Cumin powder – ½ tsp [Dry roast cumin seeds, let it cool & grind to fine powder in a stone mortar.
- Coriander leaves – 1 spring [chopped]
- Rice flour - 1 tsp
- Salt to taste
- Oil – 2 tbsp
For tempering / seasoning
- Mustard Seeds– ½ tbsp
- Curry leaves – 1 spring
- Ginger – ½ tbsp [finely chopped]
- Green chilli – 1 tbsp [finely chopped]
- Oil – 1 tbsp
Method
- Chop bhindi, add red chilli powder , salt, rice flour mix well
- Heat 2 tbsp oil in a iron dosa tawa add bhindi sauté till crisp
- In a bowl add fresh curd beat/ whisk well then add salt.
- Add red chilli powder, roasted cumin powder, and coriander leaves mix well.
- Add sautéed bhindi gently mix.
- Heat oil in a pan add mustard seeds, let it splutter then add ginger, green chilli, curry leaves cut off heat.
- Add seasoned ingredients into carrot curd mixture
- Serve immediately with chapati or pulao, biryani

Chop bhindi, add red chilli powder & salt
Add rice flour, saute till crisp
Crispy bhindi ready, cut off heat
In a bowl add fresh curd, roasted cumin powder, salt mix well, add seasoned ingredients
Add crispy bhindi,mix well
Sprinkle red chilli powder, serve with roti or biryani
