Ingredients
- Rice flour [Arisi maavu]– 1 cup
- Ragi - 1/4 cup
- Moong dal - 1/2 cup
- Curry leaves – 1 spring
- Coriander leaves – 2 springs [chopped]
- Green chilli – 1 [chopped]
- Ginger - 1 tbsp
- Coconut - 2 tbsp
- Asafoetida - 1/4 tsp
- Mustard seeds -1 tbsp
- Urad dal - ½ tbsp
- Turmeric powder - 1/4 tsp
- Salt to taste
- Oil – 1 tbsp
- Gingelly oil – 1 tbsp
- Water as needed
Method
- Wash & soak moong dal for 2 hours then drain water
- Heat pan, add water, salt, oil, boil
- Add rice flour, ragi mix well, make soft dough [Apr 3 min]
- Then cover lid, leave it for 5 min
- Then knead it for 1 min
- Then divide the dough into equal size balls
- Place small balls in a idli plates, steam it for 10 min
- Divide the dough into equal size balls [small gooseberry size].
- Heat oil in a pan, add mustard seeds & let it splutter.
- Then add urad dal sauté well
- Add green chilli , ginger & curry leaves sauté gently.
- Add moong dal, turmeric powder , coconut saute for 3 min
- Then add steamed ragi balls saute for 3 min
- Finally add chopped coriander leaves & coconut then cut off heat serve hot

Add 1 small cup moong dal
Wash and soak it for 2 hours
Drain water
BOil water
Add salt
Add oil
Boil
Add rice flour
Add ragi flour
Mix well on low flame
Cook for 5 min
Soft dough ready
Cover lid, leave it for 3 min
Knead it again
Make balls
Place it in a idli plates
Place it in a idli cooker
Steam it for 10 min
10 min later, leave it for 5 min to avoid sticking
Heat oil in a pan, add mustard, urad dal, curry leaves, ginger, green chilli, asafoetida
Add coconut
Add moong dal, turmeric powder
Add salt
Add steamed kolukattai
Saute for 5 min
Perfect soft kolukattai ready
