Cauliflower masala varuval

Ingredients
- Cauliflower – 1 cup
- Onion – 1 [chopped]
- Green chilli – 1 [chopped]
- Ginger – ½ tbsp [finely chopped]
- Garlic -½ tbsp [finely chopped]
- Curry leaves – 1 spring
- Coriander leaves – 1 spring
- Turmeric powder – ¼ tsp
- Red chilli powder – ½ tsp
- Bay leaves – 1
- Star anise – ¼ flower
- Salt to taste
- Oil – 2 tbsp
- Water as needed
For Roasting and grinding ingredients
- Cinnamon stick – 1 inch
- Fennel seeds – ½ tbsp
- Cloves – 2
- Peppercorns – 5
- Cumin seeds – 1 tbsp
- Coriander seeds – 1 tbsp
- Poppy seeds – ½ tsp
- Coconut – 2 tbsp [grated]
- Dry red chilli – 1
- Garlic – 2
- Ginger – ½ inch [chopped]
- Curry leaves – 1 spring
- Urad dal – ½ tbsp
- Bengal gram – ½ tbsp
- Tomato – 1
- Oil – 2 tbsp
- Heat oil in a pan then roast all ingredients & grind to fine paste with ¼ cup of water.
Method
- Break the whole cauliflower into medium florets.
- Take a bowl, pour warm water & add salt & turmeric powder mix well then put cauliflower & leave it for 5 min then drain water.
- Heat oil in a pan then add Bay leaves, Star anise saute
- Then curry leaves, onion garlic, ginger and green chilli sauté well.
- Add cauliflowers, turmeric & red chilli powder mix well & cook for 3 min.
- Then add ground paste and salt mix well & let it cook for another 2 min.
- Finally add coriander leaves cut off heat & serve hot.
