Ingredients
- Baby corn – 10
- Garlic – 4 cloves
- Ginger – 1 inch piece
- Green chilli – 1 or 2
- Mint leaves – 2 spring
- Coriander leaves – 2 spring
- Salt to taste
- Oil for deep frying
- Water as needed
For batter
- Gram flour [besan flour, kadalai maavu] – ¼ cup
- Corn flour – 2 tbsp
- Rice flour – 1 tbsp
- Salt to taste
Preparation Method
- Wash & boil baby corn with salt.
- In a mixer jar add ginger, garlic, green chilli, mint, coriander leaves, salt & water finely grind
- In a bowl add boiled baby corn and ground mint mixture marinate for 10 min.
- In a bowl add gram flour, corn flour, rice flour, salt, ground mint mixture & water mix well then make bajji consistency batter
- Dip marinated baby corn with gram flour batter & deep fry till crisp & golden brown on medium hot oil.
- Once its ready remove from oil, drain on absorbent paper then serve hot with tomato sauce, schezwan sauce or green chutney.

Boil baby corn with salt
In a mixer jar add garlic, ginger & green chilli
Add mint, coriander leaves, salt & add water finely grind
Green chutney is ready
Add green chutney mix well, cover it, leave it for 10 min
Make gram flour batter, add marinated baby corn
Heat enough oil, add baby corn, deep fry till crisp and golden brown
Crisp and golden brown baby corn fingers are ready, remove from oil, drain on absorbent paper
