Ingredients
- Spinach[Palak, pasalai keerai]– 1 cup
- Dry red chilli [Sigappu milagai, Vara Milagai]–1 or 2
- Green chilli –1
- Garlic – 3 cloves
- Coconut - 3 tbsp
- Roasted gram – 2 tbsp
- Bengal gram[Chana dal, kadalai paruppu] – 1 tbsp
- Urad dal – 1 tbsp
- Water as needed
- Salt to taste
For seasoning [optional]
- Mustard seeds - 1 tbsp
- Curry leaves - 1 spring
- Asafetida[Hing]- 1/4 tsp
- Oil - 1 tbsp
Method
- Wash & chop spinach.
- Heat oil in a pan add bengal gram, urad dal, garlic, dry red chilli, green chilli, coconut, & saute till light brown
- Then add spinach, & salt roast for a min.
- Put roasted ingredients, chutney gram in a mixer jar finely grind.
- For seasoning:- Heat oil in a pan add mustard seeds, asafetida & curry leaves
- Add seasoned ingredients to the ground mixture mix well then serve with idli, uthappam & dosa.

Wash & chop spinach
Heat pan add urad dal and bengal gram
Add dry red chilli
Add Onion
Add Garlic, green chilli
Add salt, Coconut
Add spinach saute for a min
Put all roasted ingredients in mixie jar, coarsely grind
Add roasted gram, finely grind
Smooth and healthy palak chutney ready
Add seasoned ingredients, mix well then serve hot with idli, dosa or rice
