Bhindi masala curry | Okra masala gravy | Ladies finger masala gravy recipe

Ingredients
- kra [bhindi or ladies finger] - 1 cup [cut into 1 inch cubes]
- Cashew nut & almond paste* – 2 ½ tbsp
*[put cashew nuts-6 & almonds-4 in a mixer jar finely grind then add milk or water then grind to smooth paste] - Tomato – 2 [boil, peel off the skin & grind to smooth puree]
- Onion – 1 [finely chopped]
- Garlic – 2 [mashed & chopped]
- Ginger – 1 inch [mashed, chopped]
- Green chilli – 1 [chopped]
- Bay leaf - 1
- Star anise – ½ flower
- Cinnamon – ½ stick
- Cumin – ½ tbsp
- Turmeric powder – ½ tsp
- Red chilli powder– ½ tsp
- Garam masla powder – ½ tsp
- Cumin powder – 1 tsp
- Coriander powder – 1 tsp
- Pepper powder – a pinch
- Coriander leaves – 2 springs [chopped]
- Sugar a pinch
- Salt to taste
- Butter – 1 tbsp
- Oil – 3 tbsp
- Water as needed
Method
- Heat 2 tbsp oil in a pan add bhindi sauté well.
- Add salt, ¼ tsp turmeric powder, ½ tsp red chilli powder & ¼ tsp garam masala powder sauté till soft & light brown.
- Heat another pan add oil & butter add Bay leaf, Star anise, Cinnamon & cumin sauté till you get nice aroma.
- Add onion sauté till golden brown.
- Add garlic, ginger & green chilli sauté.
- Add tomato puree, turmeric powder, red chilli powder mix well let it boil & thickens
- Add sautéed bhindi mix well, then add cashew nut almond paste mix well & let it boil.
- Add coriander powder, cumin powder, & garam masala powder mix well & let it boil.
- Finally add sugar let it boil.
- Finally add coriander leaves & cut off heat serve hot with rice, chapatti
