Vegetable Lemon Rice

Ingredients
- Basmati Rice [boiled] - 1 cup
- Lemon Juice - 3 tbsp
- Turmeric Powder - ¼ tbsp
- Black Pepper - 3 to 4
- Carrot [Grated] - ¼ cup
- Coconut [Grated] - 3 tbsp
- Green Capsicum[cut into long strips] - ¼ cup
- Curry Leaves - 1 spring
- Green Chilli - 1 [sliced]
- Ginger - 1 tbsp
- Mustard seed - 1 tbsp
- Bengal Gram - 1 tbsp
- Urad Dal - ½ tbsp
- Asafetida - ¼ tsp
- Oil - 2 tbsp
Preparation
- Heat pan with oil add put mustard seed. When it is started cracking add Bengal gram and urad dal. Then add ginger and green chilli
- Add black pepper, curry leaves, asafetida, and turmeric powder then mix well.
- Add carrot and green capsicum sauté well then add coconut sauté gently
- Turn off flame add lemon juice mix well. Add boiled rice, sprinkle salt as needed then mix. Add lemon juice if you wish.
- Serve and garnish with grated fresh coconut, grated carrot, coriander leaves at the top, it will gives nice color and great look
Note
- Don’t add lemon juice in the middle recipe would turn to bitter taste
Tip
- Instead of black pepper add freshly ground peppercorns at the end.
