Ridge gourd chutney | Peerkangai chutney- How to make-Step by step photos & Video

Ingredients
- Ridge gourd[Perrkangai or Turai] – 1
- Dry red chilli [Sigappu milagai, Vara Milagai]–1 or 2
- Garlic – 3 cloves
- Coconut - 3 tbsp
- Tamarind – 1 inch piece
- Bengal gram[Chana dal, kadalai paruppu] – 1 tbsp
- Urad dal – 1 tbsp
- Water as needed
- Salt to taste
For seasoning [optional]
- Mustard seeds - 1 tbsp
- Curry leaves - 1 spring
- Asafetida[Hing]- 1/4 tsp
- Oil - 1 tbsp
Method
- Peel off the ridge gourd skin, wash & roughly chop.
- Heat oil in a pan add bengal gram, urad dal, garlic, dry red chilli, coconut, & tamarind saute till light brown
- Then add peerkangai, turmeric powder & salt roast till soft.
- Put roasted ingredients in a mixer jar finely grind.
- For seasoning:- Heat oil in a pan add mustard seeds, asafetida & curry leaves
- Add seasoned ingredients to the ground mixture mix well then serve with idli, uthappam & dosa.

Wash, peel off the skin then roughly chop ridge gourd
Heat oil in a pan, add chan dal, urad dal
Add dry red chilli, roast till light brown
Add Garlic & coconut
Add tamarind roast till light brown
Add roasted ingredients
Heat same pan, add oil, ridge gourd & turmeric
Add salt, saute till soft
Now its ready, cut off heat
Add roasted ingredients, finely grind
Now its ready
For seasoning:- Add oil, mustard, curry leaves & Asafetida
Add seasoned ingredients
Ridge gourd chutney ready, serve hot with idli, dosa, rice or chapathi
