Crispy maddur vada-How to make-Step by step photos & Video

Maddur vada is unique tea time snack of Karnataka. As it is originated from a small town of karnataka, Maddur. It is crispy outside and soft inside. I have followed the traditional method and avoided maida. Onion & ground nut texture give the great look for this vada.
Ingredients
- Rice flour – 1 cup
- Groundnuts – 2 tbsp [roasted & chopped]
- Cumin seeds –1 tbsp [roasted & chopped]
- Green chilli – 1 to 2 [finely chopped]
- Onion – 1 [finely chopped]
- Ginger – 1 tbsp[finely chopped]
- Coriander leaves – 3 springs [chopped]
- Curry leaves – 1 spring [chopped]
- Salt to taste
- Water as needed
- Sesame oil- 2 tbsp
Method
- In a pan add rice flour, salt & water mix well & make dosa batter consistency.
- Heat rice flour batter, stir well till you get soft dough.
- Then add all ingredients mix well.
- Divide the mixture into equal size balls.
- Grease banan leaf with sesame oil, place lemon size ball & flatten into thick or thin circles
- Then make cavity in the middle.
- Heat enough oil in a pan, add prepared raw vada, deep fry till crisp & golden brown
- Then serve hot with green chutney or coconut chutney

Add 1 cup rice flour in a pan
Add enough water, mix well, and make dosa consistency batter
Mix well without lumps
Add salt mix well
Batter is ready
Heat pan, stir well till you get soft chapathi dough
Dough is ready
Add rava
Add groundnut
Add cumin seeds
Add onion
Add green chilli, ginger, curry leaves & curry leaves
Add sesame oil, mix well
Mixture is ready
Grease banan leaf with sesame oil
Take lemon size ball
Flatten
Make hole in the middle
Heat enough oil, drop it in hot oil
Deep fry till crisp & golden brown
Crispy maddur vada ready, remove it from oil
