Ingredients

  • Kothavarangai [Cluster Beans, guar beans] - ¼ kg or 1 cup [wash & chop]
  • Tamarind water –1/4 cup or tamarind paste – 2 tbsp
  • Curry leaves – 2 springs
  • Onion - 1 [sliced]
  • Garlic - 3 cloves
  • Turmeric powder – 1/4 tsp
  • Red chilli powder - 1 tsp
  • Mustard seeds – 1 tsp
  • Urad dal – 2 tsp
  • Bengal gram – 2 tbsp
  • Asafetida - 1/4 tsp
  • Salt to taste
  • Gingelly Oil [Sesame oil]– 3 tbsp
  • Water as needed

For roasting & seasoning

  • Fenugreek - 2 tsp [Dry roast (dont add oil for frying) fenugreek and grind to fine powder]
  • Curry leaves - 1 spring

Preparation

  • Wash cluster beans[ kothavarangai], then fienly chop.
  • Heat oil in a pan add mustard seeds, let it splutter.
  • Add Bengal gram & urad dal sauté.
  • Add Curry leaves, dry red chilli, asafoetida & curry leaves
  • Add onion & garlic sauté till soft
  • Add fenugreek powder & asafetida mix well.
  • Add cluster beans, saltred chilli & turmeric powder sauté till soft.
  • Add the tamarind paste / tamarind extract and mix well.
  • Add water if required & let it boil & thickens.
  • Heat oil in a pan add 1.5 tbsp sesame oil, curry leaves saute for a sec
  • Then add seasoned ingredient to tamaridn curry.
  • Finally add 1 tbsp of sesame oil & cut off heat.
  • Serve hot with rice.
