Kothavarangai puli kuzhambu | Cluster beans tamarind curry-How to make-Step by step photos

Ingredients
- Kothavarangai [Cluster Beans, guar beans] - ¼ kg or 1 cup [wash & chop]
- Tamarind water –1/4 cup or tamarind paste – 2 tbsp
- Curry leaves – 2 springs
- Onion - 1 [sliced]
- Garlic - 3 cloves
- Turmeric powder – 1/4 tsp
- Red chilli powder - 1 tsp
- Mustard seeds – 1 tsp
- Urad dal – 2 tsp
- Bengal gram – 2 tbsp
- Asafetida - 1/4 tsp
- Salt to taste
- Gingelly Oil [Sesame oil]– 3 tbsp
- Water as needed
For roasting & seasoning
- Fenugreek - 2 tsp [Dry roast (dont add oil for frying) fenugreek and grind to fine powder]
- Curry leaves - 1 spring
Preparation
- Wash cluster beans[ kothavarangai], then fienly chop.
- Heat oil in a pan add mustard seeds, let it splutter.
- Add Bengal gram & urad dal sauté.
- Add Curry leaves, dry red chilli, asafoetida & curry leaves
- Add onion & garlic sauté till soft
- Add fenugreek powder & asafetida mix well.
- Add cluster beans, saltred chilli & turmeric powder sauté till soft.
- Add the tamarind paste / tamarind extract and mix well.
- Add water if required & let it boil & thickens.
- Heat oil in a pan add 1.5 tbsp sesame oil, curry leaves saute for a sec
- Then add seasoned ingredient to tamaridn curry.
- Finally add 1 tbsp of sesame oil & cut off heat.
- Serve hot with rice.

Wash & chop
Chopped cluster beans ready
Heat 2 tbsp oil in a pan add Mustard, urad dal, bengal gram, garlic, dry red chilli & curry leaves
Add asafoetida[Hing in hindi, Perungayam in tamil]
Add cluster beans, saute for 3 min
Add turmeric powder, red chilli powder
Add water, cook till soft
Add tamarind paste
Mix well
Add water
Let it boil till soft
Add salt
Dry roast fenugreek
Coarsely grind
Heat 2 tbsp oil in a pan add ground fenugreek, curry leaves
Add seasoned ingredients
Mix well, let it boil for 5 min
Simple puli kulambu ready, cut off heat
