This is instant 5 min healthy breakfast with leftover idli and broccoli. Broccoli is healthy vegetable with good source of Folic acid, Minerals, Fiber, Antioxidants, Vitamin K and C. Controls blood sugar levels. It helps to reduce digestion problems & stomach ulcer. It prevents cancer & heart disease. It’s helpful for brains, skin & eyes. Boost immune system.

Ingredients

  • Idli – 2 [Use fresh or leftover idlis]
  • Broccoli - 1/2 flower
  • Onion – 1
  • Green chilli – 1 [chopped]
  • Ginger – ½ tsp [finely chopped]
  • Curry leaves – 1 spring
  • Coriander leaves – 1 spring
  • Red chilli powder - 1/4 tsp
  • Turmeric powder -½ tsp
  • Idli powder - 2 tbsp
  • Mustard seeds – 1 tbsp
  • Bengal gram – 1 tbsp
  • Urad dal – 1 tbsp
  • Salt to taste
  • Oil – 1 tbsp
  • Water – 2 tbsp

Preparation Method

  • Blanch broccoli for 3 min, cool, then chop.
  • In a bowl add idlis & sprinkle 2 tbsp of water then crumble.
  • Heat oil in a pan, add mustard seeds & let it splutter then add Bengal gram & urad dal sauté.
  • Add onion, sauté till soft.
  • Then add ginger, green chilli, curry leaves, turmeric & red chilli powder sauté.
  • Add broccoli saute for a min.
  • Add crumbled idli mixture, idli powder & salt mix well.
  • Finally add chopped coriander leaves & serve hot with pickle or chutney.
