Sprouted green gram sambar | Mulaikattiya pachai payaru sambar-How to make-Stepwise pic & Video

Cuisine Style: Tamil Nadu, South India | Cooking Time: 15-20 minutes | To Serve: 4 | Take with: Idli, Dosa, Rice, Chapathi | Type : Sambar, Gravy, kulambu, curry, masala.
Ingredients
- Sprouted green gram[Mulaikattiya pachai pyaru]– 1 cup
- Tamarind water – 2 tbsp [soak tamarind in warm water, squeeze &extract water]
- Tomato – 1 [chopped]
- Sambar Onion [Shallots] - 7
- Dry red chilli -1
- Green chilli – 1 [slit]
- Garlic – 2 cloves
- Curry leaves – 1 spring
- Coriander leaves – 2 springs [chopped]
- Turmeric powder – ¼ tsp
- Red chilli powder – ½ tsp
- Mustard seeds – 1 tbsp
- Bengal gram – 1 tbsp
- Urad dal – 1 tbsp
- Jaggery – 1 tbsp [grated]
- Asafetida a pinch
- Salt to taste
- Oil – 2 tbsp
- Water as needed
For roasting and grinding ingredients
- Fenugreek seeds – 1 tbsp [dry roast-grind separately]
- Coriander seeds - 1 tbsp
- Cumin seeds – 1 tbsp
- Peppercorns – 4
- Coconut – 2 tbsp [Grated]
- Heat oil in a pan then roast above ingredients & grind to fine paste
Method
- Heat pan with oil then add mustard seeds.
- Once it’s spluttered add Bengal gram, urad dal & sambar onion sauté till soft.
- Add garlic, dry chilli, green chilli & curry leaves sauté.
- Then add fenugreek powder, asafetida sauté gently.
- Add tomato sauté till soft.
- Add green gram sprouts, turmeric & red chilli powder sauté well.
- Add freshly ground paste & water [1/2 cup] mix well.
- Then add tamarind water & let it boil.
- When bubbles comes out add jaggery and salt mix well.
- Cut off heat & sprinkle coriander leaves, serve hot with rice, idli or dosa.

Mung bean sprouts
Mulaikatiya pasipayaru
Dry roast cumin & coriander,grind to fine powder
Dry roast fenugreek, grind to fine powder
Heat 1 tbsp oil, add chana dal, urad dal, coriander, cumin, peppercorns, saute
Add dry red chilli, coconut saute till light brown
Put roasted ingredients in a mixie jar, coarsely grind
Add water, grind to fine paste
Ground mixture ready
Heat oil, add mustard seeds
Add chana dal, urad dal
Add green chilli, curry leaves
Add sambar onion, saute till soft
Add asafoetida
Add garlic, dry red chilli
Add fenugreek powder
Add sprouts
Add red chilli, turmeric powder
Add ground paste
Add water, let it boil
Add tamarind water, let it boil till raw smell out
Add salt
Add jaggery
Add cumin, coriander powder
Add coriander leaves, cut off heat
Green gram sprouts sambar
Delicious & healthy sambar ready, serve hot with rice, idli, dosa or uthappam
