Southekayi sambar [Mangalore cucumber] By Guna selvi


Cuisine Style: Tamil Nadu, South India | Cooking Time: 10 minutes | To Serve: 4 | Take with: Idli, Dosa, Rice, Chapathi | Type : Sambar, Gravy, kulambu, curry, masala.


Ingredients

  • Southekayi [Mangalore cucumber, madras cucumber]– 1 cup
  • Toor dal – ¼ cup
  • Tamarind water – 1/4 cup [soak 1 inch size tamarind in warm water, squeeze &extract water]
  • Tomato – 1 [chopped]
  • Onion [Shallots] - 7
  • Green chilli – 1 [slit]
  • Garlic – 3 cloves
  • Curry leaves – 1 spring
  • Coriander leaves – 2 springs [chopped]
  • Turmeric powder – ¼ tsp
  • Red chilli powder – ½ tsp
  • Mustard seeds – 1 tbsp
  • Chana dal - 1 tbsp
  • Urad dal - 1 tbsp
  • Asafetida a pinch
  • Salt to taste
  • Oil – 2 tbsp
  • Water as needed

Ingredients for roasting & grinding

  • Chana dal - 1 tbsp
  • Urad dal - 1 tbsp
  • Coriander seeds - 1 tbsp
  • Cumin seeds- 1 tbsp
  • Peppercorns - 1 tsp
  • Dry red chilli - 2
  • Coconut - 2 tbsp
  • Oil – 2 tbsp
  • Water - 1/2 glass
  • Heat 1 tbsp oil in a pan, add all above ingredients, roast till light brown
  • Then grind to fien paste with 1/2 glass of water

Method

  • Wash toor dal 2 to 3 times. Then put it in a pressure cooker, add turmeric, sesame oil, cook for 3 to 4 whisltes
  • Wash & remove mangalore cucumber skin & seeds. then cut into cubes
  • Heat 2 tbsp oil in a pan add mustard, chana dal, & urad dal fry for a min.
  • Add onion, garlic, asafoetida, green chilli & curry leaves saute
  • Add fenugreek powder saute for a min
  • Add turmeric, red chilli powder, tomato, mangalore cucumber, mix well
  • Add water, cook till soft
  • Add pressure cooked toor dal & salt mix well
  • Add ground mixture & tamarind water, cook for 5 min
  • Add jaggery powder cook for 2min
  • Add coriander leaves, cut off heat
  • Then serve hot with rice, idli or dosa.

Remove seeds & skin  southekayi sambar step 2

Cut into cubes  southekayi sambar step 3

Dry roast fenugreek seeds  southekayi sambar step 4

Put it in a stone mortar, coarsely grind  southekayi sambar step 5

Fenugreek powder ready or you can use store bought fenugreek powder  southekayi sambar step 6

Add chana dal, urad dal, coriander, cumin, pepper, dry red chilli, 1 tbsp oil roast  southekayi sambar step 7

Add 2 tbsp coconut roast till light brown  southekayi sambar step 8

Put it in a mixie jar, grind to fine paste  southekayi sambar step 9

Now its ready, keep it aside  southekayi sambar step 10

Wash toor dal 2 to 3 times. Then put it in a pressure cooker  southekayi sambar step 11

Add turmeric  southekayi sambar step 12

Add 1 tbsp sesame oil  southekayi sambar step 13

Cook for 3 to 4 whisltes  southekayi sambar step 14

Add 2 tbsp oil add mustard, chana dal, urad dal hing, green chilli & curry leaves fry for a min.  southekayi sambar step 15

Add onion, garlic saute till soft  southekayi sambar step 16

add salt  southekayi sambar step 17

Add tomato saute till soft  southekayi sambar step 19

Add mangalore cucumber, turmeric & red chilli powder, saute for 3 min  southekayi sambar step 20

Add water, cook till soft  southekayi sambar step 21

Apr [8 min] for boiling time  southekayi sambar step 22

Add cooked toor dal  southekayi sambar step 23

Boil for 3 min  southekayi sambar step 26

Add tamarind water, boil for 5 min  southekayi sambar step 25

Add jaggery  southekayi sambar step 26

Add coriander leaves, cut off heat
