Crunchy masala roasted nuts [No fry] -How to make-Step by step photos

Ingredients
- Walnut - ¼ cup
- Cashews - ¼ cup
- Almonds - ¼ cup
- Pistachio - ¼ cup
- Turmeric powder – ¼ tsp
- Red chilli powder –1/2 tsp
- Garam masala powder – ¼ tsp
- Chaat masala powder– 1 tbsp
- Asafoetida[Hing, perungayam]- 1/4 tsp
- Curry leaves– 1 spring
- Oil - 1 tbsp
- Salt to taste
Preparation
- Heat pan add walnut, almonds, pista, cashews roast till crisp.
- Heat 1 tbsp oil in a pan, add curry leaves, red chilli powder, turmeric powder, garam masala, chaat masala, hing, & salt saute.
- Add roasted nuts, mix well
- Once its ready, let it cool, & store in an airtight container use within 5 days
- Then Serve hot with curd rice, evening snack, tea or coffee
TIps & variations
- You can add sesame, peanuts, pumpkin seeds, falx seeds etc.
- You can deep fry nuts
- You can add fried poha, fried sago, corn flakes, chutney gram
- For mixture you can add sev & fried moong dal also
- For caramel version:-Sugar, butter & cream or milk

Heat pan add cashews
Dry roast till crisp
Roast pistachios
Add almonds
Roast till crisp
Add walnut, roast till crisp
Roasted nuts ready
Take all masala powder and salt
Heat 1 tbsp oil, fry curry leaves
Add masala powder
Cut off heat
Mix well
Heat pan again, add roasted mixed nuts
Saute for 3 min
