One pot yellow pumpkin sambar-How to make step by step photos

Cuisine Style: Tamil Nadu, South India | Cooking Time: 10 minutes | To Serve: 4 | Take with: Idli, Dosa, Rice, Chapathi | Type : Sambar, Gravy, kulambu, curry, masala.
Ingredients
- Yellow pumpkin[Parangikai]– 1 cup [cut into circles]
- Toor dal – ¼ cup
- Tamarind water – 1 ½ tbsp [soak tamarind in warm water, squeeze &extract water]
- Tomato – 1 [chopped]
- Sambar Onion [Shallots] - 7 or big onion[1]
- Dry red chilli -1
- Garlic – 2 cloves
- Curry leaves – 1 spring
- Coriander leaves – 2 springs [chopped]
- Turmeric powder – ¼ tsp
- Red chilli powder – ½ tsp
- Mustard seeds – 1 tbsp
- Asafetida a pinch
- Salt to taste
- Oil – 2 tbsp [sesame oil or vilakennai]
- Water as needed
For roasting and grinding ingredients
- Fenugreek seeds – 1 tbsp [roast & grind separately]
- Coriander seeds - 1 tbsp
- Cumin seeds – 1 tbsp
- Peppercorns – 4
- Coconut - 2 tbsp
- Chana dal - 1 tbsp
- Urad dal - 1/2 tbsp
- Heat pan then dry roast above ingredients & grind to fine or coarse paste with 1/4 cup water
Method
- Wash toor dal.
- Heat pressure cooker add toor dal, hing, tomato, onion, garlic, turmeric, red chilli powder, asafoetida, yellow pumpkin, gingelly oil cover lid & cook for 3 to 4 whistles.
- For seasoning:-Heat pan with oil then add mustard seeds.
- Add dry red chilli, curry leaves, asafoetida, fenugreek seeds powder.
- Add seasoned ingredients to pressure cooked toor dal mixture, let it boil.
- Add tamarind water mix well.
- Add groudn paste mix well, let it boi lfor 5 min
- Cut off heat & sprinkle coriander leaves, serve hot with rice, idli or dosa.
How to make One pot yellow pumpkin sambar-Step by step photos
Heat pressure cooker add toor dal, tomato, garlic, turmeric, gingelly oil
Add yellow pumpkin
Cover lid, pressure cook for 5 whistles
After cooking toor dal pumpkin mixture ready
Roast chana dal, urad dal, coriander, cumin, coconut, dry red chilli
Put it in mixie jar, finely grind
Ground mixture ready
Add ground mixture
Add salt
Soak tamarind in 5 min
Add tamarind water
Heat pan with oil, add mustard, chana dal, urad dal, hing, fenugreek powder
Add seasoned ingredients
Mix well let it boil for 3 min
Add coriander leaves, cut off heat
