One pot mangai sambar | Raw mango sambar-How to make step by step photos

Cuisine Style: Tamil Nadu, South India | Cooking Time: 10 minutes | To Serve: 4 | Take with: Idli, Dosa, Rice, Chapathi | Type : Sambar, Gravy, kulambu, curry, masala.
Ingredients
- Raw mango[Mangai]– 1 small
- Tomato – 1 [chopped]
- Onion - 1
- Green chilli -1
- Garlic –3 cloves
- Curry leaves – 1 spring
- Coriander leaves – 2 springs [chopped]
- Turmeric powder – ¼ tsp
- Red chilli powder – ½ tsp
- Mustard seeds – 1 tbsp
- Bengal gram – 1 tbsp
- Urad dal – 1/2 tbsp
- Asafetida a pinch
- Jaggery - 1 tbsp
- Salt to taste
- Oil – 2 tbsp
- Water as needed
To be ground
- Fenugreek – ½ tbsp [dry roast & grind to fine powder]
- Coriander seeds – 1 tbsp
- Cumin & pepper - 1 tbsp
- Heat pan add all ingredients, dry roast coarsely grind.
Method
- Wash toor dal 2 to 3 times
- Wash and cube raw mango.
- Heat pressure cooker add toor dal, raw mango, tomato onion, garlic, green chilli, turmeric, red chilli powder, asafoetida, salt & sesame oil / vilakennai mix well
- Cover lid & cook for 3 to 4 whistles.
- After 4 whistles, remove steam,add jaggery let it boil for 3 min.
- For seasoning :- Heat pan add 2 tbsp oil, mustard, urad dal, bengal gram, asafoetida, dry red chilli, ground fenugreek, cumin, coriander, cumin powder & curry leaves
- Add seasoned ingredients to the toor dal mixtrue
- Sprinkle coriander leaves, serve hot with rice, chaapthi, idli or dosa.
How to make One pot mangai sambar-Step by step photos
Raw mango
Wash & Cut raw mango into cubes
In a pressure cooker, Add toor dal, mango, onion, garlic, green chilli
Add asafoetida, turmeric powder, red chilli powder
Add tomato
Add sesame oil, and salt, cover lid & cook for 3 to 4 whistles
After 3 whistles, remove steam
Heat 2 tbsp oil, add mustard, chana dal, urad dal, asafoetida, dry red chilli, ground fenugreek, cumin, coriander, cumin, pepper powder
Add seasoned ingredients
Add salt if required
Add jaggery, let it boil for 3 min
Add coriander leaves
Perfect raw mango sambar ready
Serve hot with idli, dosa or uthappam
