One pot beetroot rice-How to make step by step photos

Cuisine Style: Tamil Nadu, South India | Cooking Time: 10 minutes | To Serve: 4 | Take with: Idli, Dosa, Rice, Chapathi | Type : Sambar, Gravy, kulambu, curry, masala.
Ingredients
- Rice– 1 cup
- Moong dal – 1/4 cup
- Beetroot- 1 [peel off skin, cut into cubes]
- Tomato – 1 [chopped]
- Onion - 1
- Garlic – 3 cloves
- Curry leaves – 1 spring
- Turmeric powder – ¼ tsp
- Red chilli powder – ½ tsp
- Cumin seeds– ½ tbsp
- Mustard seeds – 1 tbsp
- Asafetida a pinch
- Salt to taste
- Oil – 2 tbsp
- Water - 4 cups
Method
- Wash rice & soak for 10 min
- Heat oil in a pressure cooker add mustard seeds & cumin seeds..
- Add onion, garlic, curry leaves, asafoetida & salt mix well.
- Add beetroot, moong dal, rice, turmeric powder & red chilli powder
- Add water, & salt mix well, then cover lid & cook for 3 to 4 whistles.
- After 4 whistles, remove steam, serve hot with ghee, papad or pickle
How to make One pot beetroot rice -Step by step photos
Heat pressure cooker add 2 tbsp oil, add mustard seeds let it splutter
Add cumin seeds
Add onion, garlic, curry leaves
Add salt
Add tomato
Add beetroot
Add turmeric powder
Add red chilli powder
Add moong dal
Add rice
Mix well
Add water, let it boil
Add salt, cover lid, cook for 4 whistles
Healthy Beetroot rice ready
Serve hot with curd or pickle
