Homemade Soan papdi- How to make-Step by step photos

Main Ingredients
- Gram flour - 1/5 cup
- Maida -1 cup
- Ghee -2 tbsp
- Cardamom powder -1 tsp
- Sugar - 1.5 cup
- Water - 1/2 cup
- Pista, almonds - 2 tbsp
Preparation
- Heat pan add 2 to 3 tbsp ghee, add gram flour, maida roast for 10-12 min on low-medium flame
- Then seive without lumps
- Add cardamom powder, mix well
- Add 1.5 cup sugar, 1/2 cup water, cook until caramel consistency [Hard balls consistency-15-20 min]
- Add 2 tbsp Lemon juice, mix well
- Pour over the butter sheet tray [large], gently mix until it thickens
- Then grease hansd with ghee, make log shape when its warm
Stretch and fold 8 to 10 min - Make sircle shape, seal the edges
- Place it in a roasted flour, stretch and fold for 10 min until multiple layers appears
- Dont break the circle
- Once 1000 soft thread like layers apeared, put it in a tray, sprinkle pista, gently press then de-mold
Store in an airitght container, use within 1 week
