Yellow pumpkin soup | Parangikai soup

Ingredients
- Pumpkin – 1/2 or 1 cup[cubes]
- Onion – 2 [sliced]
- Garlic – 4 cloves
- Pepper powder - 1 tsp
- Coconut milk - 3 tbsp
- Turmeric powder -1/2 tsp[optional]
- Red chilli powder -1/2 tsp[optional]
- Salt to taste
- Butter - 2 tbsp
- Vegetable stock or water as required
Method
- Heat 1 tbsp butter in a pan add onion, garlic saute till soft
- Add pumpkin cubes, turmeric, red chilli powder & salt saute for 3 min
- Add water/ vegetable stock cook till soft
- Put cooked pumpkin in a mixer jar, blend till smooth
- Heat butter in the same pan, add ground pumpkin puree, coconut milk & salt let it boil for 3 min
- Finally add pepper powder or freshly ground pepper serve hot with toasted bread cubes
